Homemade Thai Soup Recipe


Do you want to get out of the routine of taking chicken soup with noodles? Try this homemade Thai Soup, loaded with fresh Thai flavors that make it both light and hearty, all in 30 minutes or less.

  • Total time: 30 minutes

Ingredients:

  • 1 cup raw basmati rice
  • 2 tablespoons unsalted butter
  • 1 pound peeled medium shrimp (or you can use chicken or tofu )
  • Kosher salt
  • 2 drops of Black Pepper Vitality ™
  • 2 drops of Lemongrass Vitality ™
  • 2 cloves of garlic, chopped
  • 1 onion, cut into cubes
  • 1 red pepper cut into cubes
  • 1 tablespoon of grated ginger
  • 1 drop of Ginger Vitality
  • 2 tablespoons of red curry paste
  • 2 cans (12 ounces) of unsweetened coconut milk
  • 4 cups of vegetable broth
  • Juice of 1 lime
  • 2 c Teaspoons of chopped fresh cilantro

Preparation

  1. Cook the basmati rice in a saucepan following the package instructions; leave aside.
  2. Melt the lard in a large pot or cast iron pot, at medium temperature. Add the shrimp and salt to taste. Mix occasionally while cooking until they turn pink, between 2 or 3 minutes. Remove the shrimp and place them in a separate bowl.
  3. Add all the vegetables (garlic, pepper, onions) to the pan. Mix occasionally, occasionally until tender, between 3 or 4 minutes. Mix the ginger until it is aromatic, like 1 minute.
  4. Add the curry paste until everything is well together, about 1 minute. Gradually mix coconut milk, vegetable broth and Vitality oils; cook gently mixing until everything is completely mixed.
  5. Boil, reduce heat and simmer until soup thickens.
  6. Add rice, shrimp lime juice and cilantro.
  7. Season with salt and pepper to taste.
  8. Serve and garnish with fresh limes and coriander sprigs.
